She already has opal earrings and an opal pendant that she inherited from her great-grandmother which she adores, and she hinted to me once that she'd love a wedding ring to match.

Although it's technically acceptable to give your wife an opal wedding ring, opals are a softer and less resilient birthstone than diamonds, and they aren't recommended for daily wear. Over-wearing takes its toll on opal jewelry, especially rings because they're worn on your fingers where they are subject to a lot of bumping and banging around, and they can get scratched up easily. Since they're sensitive to moisture, you have to remove opals for cleaning, showering, gardening, sports, and lots more activities, so opal engagement rings or wedding rings aren't recommended. It's best to reserve opal jewelry for special occasions. I think you should stick with a traditional wedding ring, and get your wife another opal dress ring for her to wear on special occasions, maybe for her birthday or your first anniversary, or just as a sweet surprise.

In my opinion, any birthstone set wedding ring is acceptable, and opal rings in particular. Opals are a beautiful and unique choice for a wedding band or engagement ring center stone due to their romantic hazy hue and pleasing color. If you insist on being traditional yet still want to incorporate opals into your fiancé's ring, consider using the opals as accent stones rather than as center stones, and diamonds as center stones. Make sure that the setting and metal of the band go well with the birthstones as well as match her already existing set of opal jewelry. Congratulations and good luck!
